Dehydrated Ginger

Dehydrated Ginger: Powder, Mesh and Microbial Grade

Dehydrated ginger is sold on three numbers, and buyers who only discuss the first one usually end up paying twice. Mesh size decides how the powder behaves in a blend. Volatile oil and pungency decide whether the ginger can still be tasted at the inclusion rate your formula uses. Microbial status decides whether the material can enter your plant at all without a further kill step.

Phoenix Food Technology supplies dehydrated ginger powder from Shandong in two production routes — standard 80–100 mesh and steam-sterilized 100–120 mesh — for seasoning houses, food manufacturers and private-label brands.

The Two Products in This Range

The upstream raw material is the same fresh rhizome handled in our fresh ginger category, which is why the two ranges can be discussed against one quality conversation.

Why Mesh Size Matters More Than It Looks

Mesh is a particle size, and particle size controls three things at once: dispersion, appearance and extraction speed. An 80–100 mesh powder hydrates and disperses at a predictable rate in a dry blend and stays visually even in a sachet; a 100–120 mesh powder disappears faster into a liquid system and reads as smoother on the palate, which is why beverage and instant-soup applications tend to specify the finer cut.

Finer is not automatically better. A very fine ginger powder can dust heavily on a blending line, compact in storage, and lose volatile oil faster because of the larger exposed surface. The right answer depends on the process, which is why both grades exist rather than one replacing the other.

Flavour: Volatile Oil and Pungency

Dried ginger carries its heat from gingerols and its aroma from volatile oil, and both decline with heat exposure and with storage time. Dehydration temperature, drying time and the storage conditions after milling decide what is left in the bag when it reaches your factory — not the country of origin alone.

We declare volatile oil and moisture on the certificate of analysis for each lot so the value can be trended across deliveries rather than assumed from a single approval sample. If your formula is sensitive to pungency, ask for the retained sample of the previous lot alongside the current one; a side-by-side tasting settles in ten minutes what a specification sheet cannot.

Steam Sterilization and Microbial Control

Steam sterilization uses saturated steam under pressure to reduce microbial load without a chemical residue, and it is the usual route for material destined for ready-to-eat or low-moisture products. It is a process step, not a label: the outcome depends on the starting load, the temperature and time profile, and the recontamination controls after treatment.

Because the treated powder is hygroscopic, packing integrity after sterilization matters as much as the treatment itself. We pack immediately into food-grade liners and check seal integrity before cartoning, and total plate count, yeast and mould, coliforms and salmonella are reported per lot against the specification agreed at order stage.

Applications

  • Seasoning and spice blends — a carrier-friendly powder that disperses evenly and does not segregate in the blend.

  • Sauces, marinades and ready meals — consistent pungency at low inclusion rates.

  • Bakery and confectionery — ginger notes in biscuits, cakes and gingerbread without fresh rhizome handling.

  • Beverages and instant powders — the 100–120 mesh grade for faster hydration and a smoother mouthfeel.

  • Tea, herbal blends and nutraceutical premixes — where microbial status and particle size both appear on the specification.

Packing, MOQ and Loading

Standard export packing is a 25 kg net food-grade kraft bag with an inner PE liner, and fibre drums or cartons on request. Retail and foodservice packs are produced for private label. The minimum order is 1 metric ton per mesh grade; a 20-foot container carries around 16 tons and a 40-foot container around 25 tons in 25 kg bags. Terms are FOB Qingdao with payment before shipment, and standard grades ship within 5 working days of a confirmed order, with longer lead times only where a sterilization run or a custom pack has to be scheduled.

Certification and Documentation

HALAL certification is available for the dehydrated ginger range. Each shipment carries commercial invoice, packing list, certificate of origin, certificate of analysis and, where required, phytosanitary certification. Plant audit documentation and market-specific requirements are confirmed at quotation so that the specification you approve is the specification that ships.

How to Specify Dehydrated Ginger Correctly

Write three lines into the purchase specification: mesh range, volatile oil or a sensory reference sample, and microbial limits. Add the packing format and whether weight is declared net of liner. Those five items remove almost every dispute that arises in this category, because they are the five things that differ between two powders that both look like ginger powder.

Buyers building a first specification often start from our frozen ginger granules page, which describes the same raw material in IQF form — useful when comparing a dried versus frozen route for the same finished product.

Frequently Asked Questions

What does 80–100 mesh mean in practice?

It is a particle size range: the powder passes an 80 mesh screen and is retained on a finer one. Practically, it disperses evenly in dry blends and stays visually uniform in sachets, which is why it is the standard choice for seasoning houses.

When should I choose the steam-sterilized grade?

When the finished product is ready-to-eat or when your market sets microbial limits the standard grade cannot meet. The kill step reduces the load on the raw material so your process does not have to carry it.

Does finer grinding make the ginger stronger?

No. Finer grinding changes how quickly the powder hydrates and how it feels on the palate, and it slightly increases the surface area exposed to aroma loss. Pungency comes from the raw material and the drying process, not the mesh.

Can you supply a specification against our existing blend?

Yes. Send the mesh range, the microbial limits and a reference sample of the material you use today. We match against the sample and confirm the certificate of analysis before the first production run.

What is the minimum order and lead time?

The minimum is 1 metric ton per mesh grade. Standard grades ship within 5 working days of a confirmed order; a 20-foot container holds around 16 tons and a 40-foot around 25 tons in 25 kg bags.
