Air-dried ginger
Shandong China
20251011
Large yellow ginger is the Shandong variety buyers ask for by name: a thick, heavy rhizome with smooth pale-yellow skin, dense flesh and a high yield of usable root after peeling. Compared with smaller-fingered varieties it produces less trim loss and a broader slice, which is why it is the grade that restaurant groups and processors specify when they want consistency rather than whatever the market has that week.
The defining characteristics are measurable, not marketing: rhizomes that hold weight, a thin skin that peels cleanly, pale yellow flesh with a fine, low-fibre texture, and a pungency that stays sharp rather than turning musty in storage. Those are the traits we select for at harvest and re-check at grading, because a container of ginger that looks right and peels badly costs the buyer more in labour than it saved on price.
Variety is only half the answer; maturity and handling decide the other half. Ginger lifted too early has a thin skin, high water content and a short storage life. We lift at full maturity when the skin has set, cure the crop properly, and hold it in controlled-temperature cold storage — the three steps that determine whether the rhizome is still firm at week six or already sprouting.
Grading is by rhizome size and by hand-sorted appearance. Blemished, mechanically damaged or soft roots are removed rather than averaged into the lot, and each grade is quoted as a distinct specification with its own price rather than a single headline number that hides the mix.
Restaurant and hotel kitchens — consistent rhizome size means predictable peel yield and portioning.
Retail and e-commerce packing — large, clean rhizomes present well in fixed-weight trays and consumer packs.
Processing — dense flesh gives a higher recovery rate in paste, juice and slice lines.
Importers and wholesalers — a named variety with a stable spec is easier to re-sell than an unnamed lot.
If your requirement is bulk volume for foodservice rather than a named variety, see wholesale fresh ginger. For a shelf-stable root that ships without a cold chain, see air-dried large yellow ginger. Buyers building a full ginger programme can also draw on our frozen ginger granules for out-of-season continuity.
Export packing is 10 kg mesh bags or 10 kg cartons, with vented cartons for longer transit where airflow matters and palletised options for distribution centres that require them.
The minimum order is 1 metric ton per grade, which allows a buyer to run a full quality check on commercial-scale material before committing to a container. Container loading is confirmed against the chosen packing format at order stage — mesh bags and cartons cube differently, and an accurate figure is more useful than a round one.
We pack and label under your brand: mesh bag print, carton print, retail label design, barcode and traceability coding, and mixed-grade outer cases for distributors carrying a range. Artwork is proofed and approved before the first run, and the approved file is retained so repeat orders match without re-checking.
Samples are supplied before a bulk commitment — tell us the grade and the tests your lab will run. Each shipment carries the commercial documents your broker asks for (invoice, packing list, certificate of origin, phytosanitary certificate) plus conformity documentation for the schemes our plants are audited to: ISO, BRC, HACCP, KOSHER, HALAL, NOP, EOS and AIB. Where your market requires a specific certificate for clearance, name it at quotation stage and it is built into the order.
Phoenix Food Technology grows on its own farmland in Ju County, Rizhao, grades in its own facility and holds stock in its own cold storage. That vertical control is what allows a named variety to be held to the same specification across repeat orders instead of being re-bought on the open market each season. Normal lead time is within three weeks of a signed contract, with a seven-day option when a supply window closes unexpectedly. The company's wider range — frozen vegetables and cocoa powder — ships on the same export desk, so mixed programmes can be coordinated.

We are a grower-packer: the ginger is grown on our own farmland in Shandong and graded and packed in our own facility, so raw material and processing sit under one management rather than being sourced shipment by shipment.
Yes. Our plants are audited to ISO, BRC, HACCP, KOSHER, HALAL, NOP, EOS and AIB, and the certificate your broker needs ships with the documents. State it at quotation stage so it forms part of the order.
1 metric ton per grade. Container loading is confirmed per packing format once the order is set.
Yes — printed bags, printed cartons, retail labels, barcodes and traceability coding, with artwork approved before production.
Yes. Send the grade and the tests your lab will run and we will arrange sample material ahead of a bulk order; sample freight terms are confirmed at request.
To quote this grade accurately we need destination port, rhizome size band, packing format, expected volume and the certificates your market requires. Send them through the enquiry form and the quotation comes back against that specification.
