Sweet Potato Varieties & Their Differences

Sweet potatoes are mainly categorized by flesh color: red orange flesh, yellow white flesh and purple flesh. Their core differences lie in moisture, starch and sugar content, which determine texture and suitable cooking methods.

1. Red / Orange Fleshed (High sugar & moisture, soft and syrupy, ideal for roasting)

High sugar and moisture with relatively low starch. They turn soft and syrupy when roasted, the classic roasted sweet potato type.

1. Yanshu 25 – King of Roasting Sweet Potatoes Red skin, orange red flesh. It oozes honey like syrup after roasting, tender and almost fiber free. Best for oven or air fryer roasting. Steaming is acceptable, yet roasting brings out its best flavor. Note: Poor storage tolerance. Freshly harvested tubers need 1 2 weeks of curing for better sweetness.

2. Xiguahong (Pushu 32) Red skin, orange flesh. High sweetness with fine texture and few fibers. Good storage performance and becomes sweeter over time. Suitable for roasting, steaming and making dried sweet potato strips. Cost effective option.

3. Liu'ao Honey Sweet Potato (Fujian coastal sandy soil origin) Pink skin, golden flesh with thin peel. Soft and sweet. Works well for roasting, steaming and boiling, featuring distinctive sandy soil flavor.

✅ Best for lovers of sweet, soft roasted sweet potatoes. Note: High sugar content; avoid over consumption for weight management.

2. Yellow / White Fleshed (High starch, low moisture, chestnut like floury texture, best for steaming)

High starch and low moisture, with dry, floury chestnut like taste. Not fit for roasting (turns dry and tough). Perfect for steaming, rice cooking and porridge.

1. Chestnut type Sweet Potato (Qinshu, Shangshu 19) Red skin, yellow white flesh. Dry, floury with chestnut aroma, moderate sweetness. Strong satiety, great staple substitute for weight loss diets.

2. Tianmushan Mini Sweet Potato (Xinxiang) Small sized, red skin, yellow flesh. Fine and floury texture, bite sized pieces, friendly for elders and kids. Best steamed.

3. Qiaotou Sweet Potato (Hainan) Yellow fleshed, floury with subtle honey aroma, thin peel. Steaming recommended.

3. Purple Fleshed (Purple Sweet Potato, rich in anthocyanin, floury and mildly sweet)

Purple skin and flesh, high in anthocyanin. High starch, low moisture and mild sweetness, tends to be dry. Rarely roasted. Ideal for steaming, puree, taro balls, desserts and smoothies. Representative varieties: Ziluolan, Jizishu No.1. Tip: Anthocyanin leaches in water. Steaming retains more nutrients than boiling.
