The various types of ginger can be understood through three classification systems: by maturity—divided into three commercial forms: young ginger, fresh ginger, and mature ginger; by origin—categorized into dozens of local Chinese varieties, new varieties developed through scientific breeding over the past two decades, and overseas varieties; and by processing method—classified into six types of traditional Chinese medicinal slices: raw ginger, dried ginger, processed ginger, ginger charcoal, simmered ginger, and ginger peel; additionally, there are easily confused related genera within the Zingiberaceae family, such as Zingiber officinale (ginger), Alpinia officinarum (kauta), and Amomum villosum (cao guo).

Among China's domestic ginger-producing regions, Shandong dominates the export market with varieties such as Laiwu Large Ginger and Anqiu Large Ginger; Anqiu Large Ginger accounts for approximately 80% of the nation's total ginger exports. In the southwestern region, Yunnan Small Yellow Ginger boasts a particularly high pungency level—specifically, the pungency content in Wenshan Small Yellow Ginger reaches as high as 6%. Tongling White Ginger from Anhui and Fengtou Ginger from Laifeng, Hubei, represent the quintessential examples of white ginger and specialty ginger varieties, respectively, and both carry national geographical indication designations. In terms of scientific breeding, cultivated varieties such as Shanong No.1, Lujiang No.1, Jinfeng No.1, and Chuanjiang No.1 have generally seen yield increases ranging from 13% to over 30%. Internationally, Indian ginger varieties feature a diverse naming system, Nigerian ginger is renowned for its high pungency, and Jamaican Blue Ginger is regarded as a premium seasoning ginger.

1. Types of ginger: A comprehensive overview of ginger varieties

Ginger may seem ordinary, but if one were to ask, "How many varieties of ginger exist?" the answer is far more complex than one might imagine. The "varieties" of ginger can be understood through at least three different criteria:

· According to maturity and commercial classification: the same ginger plant exhibits three distinct forms—young ginger, fresh ginger, and mature ginger—at different harvesting stages, each with distinct taste profiles and uses.

· By variety origin: Major domestic production regions have given rise to dozens of local ginger varieties, such as Laiwu large ginger from Shandong, Luoping small yellow ginger from Yunnan, Tongling white ginger from Anhui, and Laifeng Fengtou ginger from Hubei – many of which hold national geographical indication status; over the past two decades, research institutions have developed a range of new high-yielding, disease-resistant varieties using techniques such as irradiation breeding and tissue culture-based virus elimination.

· According to processing and preparation methods: A single plant of Zingiber officinale can be processed into six types of traditional Chinese medicinal slices—fresh ginger, dried ginger, processed ginger, ginger charcoal, simmered ginger, and ginger peel; additionally, there are turmeric, galangal, and black cardamom—plants belonging to the same family but different genera, which are often mistakenly regarded as "relatives" of ginger.

By including both domestic local varieties, newly bred varieties, traditional Chinese medicine (TCM) forms, easily confused closely related species, and international varieties in the analysis, more than 80 distinct ginger species can be identified. The following section will present these species in the following order: "Morphological classification – Domestic varieties – Newly bred varieties – TCM forms – International varieties."

2. Young ginger, fresh ginger, and mature ginger: three distinct forms of ginger from a single plant

The commercial classification based on harvesting maturity is the most practical way for ordinary consumers to categorize ginger when purchasing or using it. Ginger farmers harvest young rhizomes in summer to produce young ginger; they harvest mature ginger in autumn, which is considered new ginger; and ginger left for seed production or harvested the following year is classified as old ginger. These three types are not different varieties but represent the same variety at different growth stages.

2.1 Young Ginger: Crispy, tender, and residue-free fresh summer product

Fresh ginger has the most versatile applications: it helps relieve exterior syndromes and dispel cold, warms the middle jiao to stop vomiting, removes fishy odors and enhances the freshness of dishes; it is ideal for use in soups, stir-fries, or as ginger tea. When one catches a cold in an air-conditioned room or experiences stomach discomfort after consuming seafood, a bowl of fresh ginger soup serves as a convenient home remedy [Tencent News]. 3.1 Shandong Production Region: The Ginger Kingdom and Key Export Hub

Shandong Province is the national hub for ginger cultivation and export, with renowned ginger varieties cultivated in areas such as Laiwu, Anqiu, Changyi, and Qingzhou.

Laiwu ginger is cultivated in the Laiwu District of Jinan City. The plants are tall (75–90 cm), featuring large rhizomes with few, sparse nodes arranged in a single layer; the rhizome skin is bright yellow, and each plant weighs 400–450 g, with yields potentially exceeding 1 kg [Tencent News]. This variety is characterized by its thin filaments, fine flesh, strong pungent aroma, and excellent storability; it can be consumed fresh as a seasoning and serves as a primary export variety of ginger in China, holding the national Agricultural Product Geographical Indication certification [Baidu Baike].

Laiwu Ginger (also known as Laiwu Small Ginger or Horse-Hoof Ginger) is cultivated exclusively in Laiwu. It features vigorous branching, numerous ginger bulbs arranged closely together, short internodes, tender flesh, and a strong pungent aroma; it is suitable for both fresh consumption and pickling.
